ebi fry with rice

Ingredients

  • 15 large prawns1000 grams2 cup panko400
  • 3 eggs200 cornstarch30
  • ground black pepper5 oil2000
  • Rice flour100 gramssake10
  • salt5

Cooking Method

  • Step 1
    cook 3 bowl of rice with rice cooker. peel off the head of the prawns and outer shell except the tail bit. remove the veins from the prawns.
  • Step 2
    sprinkle corn starch on the prawn to absorb the smell and dirt from the shrimp. rinse prawn under running water. add prawns in a small bowl and mix with 2 teaspoon of sake. straighten the prawns as much as possible.
  • Step 3
    add 3 eggs in a bowl and beats it well until you get an even mixture. dredge prawns in flour and then beaten eggs. repeat it 2 times and then dredge with panko.
  • Step 4
    heat oil to 180 degree celcius. gently drop about 3-5 prawns at one time and deep fry for 3-5 minutes or until golden brown.
  • Step 5
    transfer cooked prawn on to a paper towel to remove excess oil. repeat until all prawns is cooked. serve 5 prawns on a bowl of rice and ebi fry with rice is ready!
