  • chili powder5 dashi powder8
  • fish cake50 mirin20
  • Pork belly100 gramsShiitake mushroom100 grams
  • soy sauce20 Udon200 grams
  • water700 Watercress10 grams

Cooking Method

  • Step 1
    slice pork 1 inch section. marinade pork with 1 teaspoon of soy sauce and 1 teaspoon of mirin.
  • Step 2
    boil a small pot of water. cook udon until it separates. place udon in a strainer and rinse with tap water. drain and transfer to 2 separate bowls.
  • Step 3
    using the same pot boil the water again and cook pork slices for about 10 seconds. transfer pork to bowl with udon.
  • Step 4
    using a new pot, add 700ml water , 3/4 tablespoon of dashi powder, half tablespoon of mirin and half tablespoon of soy sauce and bring it to simmer. add mushroom , fish cakes , and simmer for further 3-4 minutes.
  • Step 5
    top serving bowls with cooked ingredients and add soup into the bowls. garnish with watercress and pork udon is ready to serve.
