Ingredients

Total Cooking Time: 60 minutes & above

  • caper60 dough1
  • dry yeast7 grated mozarella150
  • olive oil30 olive oil20
  • parma ham50 Parmesan (Parmigiano)75 grams
  • pepper5 rocket leaves100
  • salt15 salt5
  • sugar15 tomato puree20
  • topping1 warm water100
  • white bread flour500

Cooking Method

  • Step 1
    for dough, add flour, yeast, and sugar to a bowl. add water and knead for few minutes and then add salt.
  • Step 2
    knead for a further 10 minutes. transfer to a large bowl cover with large damp cloth. leave for about 2 hours and remove air from the dough.
  • Step 3
    leave it for a further 2 hours and then cover with oiled clear film and place in a fridge for about 20 hours.
  • Step 4
    remove dough and divide into 4 portion and roll into a round shape. make it as even as possible.
  • Step 5
    preheat oven to 250 C. spread tomato puree over the base , allow about 2cm gap from the edge. add cheese , salt and pepper on top of the base evenly.
  • Step 6
    sprinkle caper and parmesan evenly and cook directly in oven for about 15 minutes or until cheese is bubbly and crust golden.
  • Step 7
    remove from oven and add parma ham and rocket leaves on top. drizzle with olive oil and serve immediately.
